Dutch Oven French Boule // 

made in a dutch oven in the french style

I don't eat bread as much as I used to, but when I do, this is my favorite loaf; full of flavor, dense and rustic. Makes  perfect toast points for cheese boards and is even better as your topper in French Onion Soup. Or, if you just want a really great piece of gluten-free bread,  this recipe is a wonderful, easy place to start.

Ingredients // 

3 1/4 cups (390g.) bread & pizza blend

1 teaspoon baking powder

1 tablespoon kosher salt

1 cup + 1 tablespoon lukewarm water

1 tablespoon (9g.) active dry yeast

1 tablespoon honey

3 eggs

1 teaspoon vegetable oil, like grape seed

Putting it Together // 

1. Place the Dutch oven, with the lid on, in the oven. Preheat oven to 450.

2. In a stand mixer with the paddle attachment, combine the Bread & Pizza Blend with the baking powder and salt.

3. In a large liquid measuring cup, whisk the active yeast into the water with the honey. Allow to sit for 5 minutes to activate.

4. In a separate bowl, add the eggs to the oil.

5. Mix on low to get the dough going, then increase to medium speed to fully combine the dough.

6. Turn dough into a greased bowl and allow to rise for 30 minutes.

7. Knead using the belly button fold until very smooth. Shape the dough into a round and generously coat with glutinous rice flour. Place in a dutch oven, slash the top with 2-5 slash marks and bake for 30 minutes at 450.

8. Remove the lid and finish baking for 15 minutes more.

Transfer to a wire rack to cool completely.
